How to make soy milk and okara (soybean pulp)

This is how to make soy milk at home. It's healing, delicious and much easier than you think. Soy milk is naturally ketogenic and you end up with a fantastic byproduct - okara (soybean pulp). It's great for keto vegan baking.

INGREDIENTS & TOOLS:

500g dried soybeans
3.5 ltrs fresh water
Cheese cloth (or nut milk bag)
A blender

DIRECTIONS

1. Soak dried soybeans overnight (6-10hrs)
2. Drain and discard water. In a blender, blitz the soaked beans with some water (taken from 3.5 ltr of water) till smooth. Add in the remaining water.
3. Shift the soy bean mixture though cheese cloth, squeeze out the milk. Place the bean pulp (okara) in a container and freeze till later use.
4. Cook the raw milk in a large pot in medium heat till it comes to a boil. Turn down the heat to low setting and allow to simmer for 10mins. Stir constantly.
5. Enjoy the milk while pipping hot or chilled.
