Keto vegan “Very Berry” muffins | Gluten free

These keto vegan blueberry muffins are the most delicious breakfast or snack one could have. They are fluffy, moist and burst with the berry goodness. Life doesn’t get any better.

INGREDIENTS

(Makes 4-6 muffins depends on size)
200g ground almonds (or 60g coconut flour)
40g ground chia seeds (or ground flaxseed)
20g baking powder
Sweetener of your choice
100g coconut oil
100g (or mil) nut milk (may need more for coconut flour version)
Vanilla extract
A small pinch of salt
1/2 cup Blueberries (and some for toppings)

DIRECTIONS

1. Add all ingredients (except nut milk and blueberries) in a mixing bowl and mix well.

2. Incorporate the nut milk (small amount at a time) till the mixture reaches a firm batter state. Add in blueberries and fold gently together.

3. Fill the muffin cups with the mixture and bake in a 180C preheated oven for 35mins (the coconut flour version may need slightly longer baking time).

4. Leave to cool down to room temperature before eating.
