The best vegan keto zucchini burger

Who could resist a good burger? I certainly can’t. This gorgeous keto vegan zucchini burger not only will make a great meal, it will make your day!

INGREDIENTS

(makes 4-5 burger patties)
300g mushrooms
400g courgettes (zucchini)
1 onion
A handful of toasted pine nuts (or any chopped nuts)
1 tbsp psyllium husk powder
1 tbsp Nutritional yeast (optional)
Salt and pepper to taste

DIRECTIONS
--------------------
1. Shred courgettes (zucchini) in thin strips using a food processor or cheese grater. Sprinkle some salt and mix well. Leave it to rest for 15mins. Gently squeeze out excess liquid. Discard liquid.

2. Chop the mushrooms and onions finely. Saute them till they no longer release liquid.

3. Add all vegetables and the remaining ingredients in a bowl and mix well. Season with salt and pepper. Leave to rest in the fridge for 15-20mins

4. Take a desired portion of the patty mixture and shape it into a ball. Fry with medium heat till it’s golden brown on both sides. Grease the pan thoroughly to prevent sticking.
