This creamy, luxurious Nutella chia pudding is packed with yumminess and plant-based protein. You can indeed have your pudding and eat it too :)

CHIA PUDDING MIX (4-5 puddings)

5 - 6 tablespoon Chia Seeds
2 tablespoon flaxseed meal
3 cups vegan milk or a mix of vegan milk and coconut cream/milk. (I use half and half of almond milk and coconut cream)
Sweetener of your choice (I use erythritol)
Vanilla extract

HOMEMADE NUTELLA (makes 350ml Nutella)

300g (2 cups) unroasted/unsalted hazelnuts
90g unsweetened dark chocolate (or 2-3 tbsp of raw cacao powder, add som oil of your choice while you blend till it reaches the desired consistency)
Sweetener of your choice ( I use icing erythritol)
Vanilla extract
A pinch of salt (roughly ¼ tsp)

ASSEMBLY

(these you can tweak based on your preferences) :
Vegan yoghurt or coconut cream
Berries of your choice
Homemade nutella (recipe see above)
Chopped nuts (toasted coconut flakes work really well too!)
