Tasty Pumpkin Spice Whoopie Pies Recipe

When you are craving the pumpkin and spicy taste of Fall, instead of whipping up some traditional pumpkin pie, why don't you get creative and try these amazing and tasty Pumpkin Spice Whoopie Pies with salted caramel and cream cheese filling! Your guests will be extremely impressed with your baking skills, and you don't even have to let them know how easy they are to make! These festive whoopie pies come together quickly and are filled with creamy filling that go so well with a hot coffee or tea after dinner! Ingredients:

Filling

1/4 cup caramel sauce (you can make this sauce quickly by melting down caramel squares in the microwave for 30 sec - 1 minute)
1/2 teaspoon coarse sea salt
1/4 cup melted butter
1/2 teaspoon vanilla extract
4 ounces cream cheese
1 3/4 cups powdered sugar

Whoopie Pies

2 1/4 cups white flour
2 teaspoons cinnamon
1/2 teaspoon ground ginger
1/8 teaspoon ground cloves
1/4 teaspoon ground nutmeg
1/2 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
2/3 cup white sugar
2/3 cup brown sugar
3/4 cup melted butter
1 tsp vanilla extract
2 large eggs
1 cup pumpkin
powdered sugar (for topping)

Directions:

Filling

Melt caramel squares in a glass bowl in the microwave or over a steaming pot of water. Make sure to keep a close eye on it and stir often to avoid overcooking and burning. Once completely melted, add 1/2 teaspoon of coarse sea salt and mix thoroughly. Set caramel and sea salt mixture aside.

In a larger glass bowl, add 1/4 cup melted butter, 1/2 teaspoon vanilla extract, 4 ounces cream cheese and use a hand mixer or blender to combine together until light and fluffy. Once combined together, add the caramel and coarse sea salt mixture to the cream cheese mixture and continue blending until incorporated. Make sure to scrap the sides of the bowl while mixing. Once the cream cheese mixture and caramel sauce are completely mixed together, add 1 3/4 cups powdered sugar and mix in well. Put bowl of filling aside.

Whoppie Pies

In another large bowl, add 2 1/4 cups white flour, 2 teaspoons cinnamon, 1/2 teaspoon ground ginger, 1/8 teaspoon ground cloves, 1/4 teaspoon ground nutmeg, 1/2 teaspoon baking soda, 1 teaspoon baking powder and 1/2 teaspoon salt. Mix dry ingredients together until well incorporated.

Mix your wet ingredients in another large bowl. Add 2/3 cups white sugar, 2/3 cup brown sugar, 3/4 cup melted butter and 1 tsp vanilla extract mix well until completely combined and all lumps are gone. Add 2 large eggs and 1 cup of pumpkin puree and continue mixing well.

Once the pumpkin mixture is well combined with no lumps, slowly add the flour mixture to the pumpkin mixture. Make sure to add a little flour at a time while mixing to make sure it gets completely mixed, and don't forget to scrap the sides of the bowl as you go!
Using an ice cream scoop, scoop out 12 whoopie pies 2 inches apart onto a greased baking sheet, or use parchment paper. Bake whoopie pies at 375 F for 10 minutes. Once they are baked, let them cook for 5 minutes to let set.

Using ice cream scoop, add one scoop of salted caramel filling to the bottom one a whoopie pie and top with another whoopie pie, making a sandwich with two delicious pumpkin cookies and salted caramel filling in the middle! Once put together, top with powdered sugar.
