For the Chicken Marinade:
1.5 pounds (700g) boneless, skinless chicken thighs or breast
2 tablespoons plain yogurt
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon ground paprika
1 teaspoon ground turmeric
1/2 teaspoon ground cinnamon
1/2 teaspoon cayenne pepper (adjust to taste)
Salt and black pepper to taste
For the Shawarma Sauce:
3 tablespoons tahini
2 tablespoons plain yogurt
2 tablespoons mayonnaise
1 tablespoon lemon juice
1 clove garlic, minced
Salt and black pepper to taste
For Serving:
Pita bread or flatbreads
Sliced cucumbers, tomatoes, and onions
Fresh parsley or cilantro
Instructions:
In a bowl, combine all the marinade ingredients (yogurt, olive oil, minced garlic, cumin, paprika, turmeric, cinnamon, cayenne pepper, salt, and black pepper). Mix well.
Cut the chicken into thin strips or bite-sized pieces. Add the chicken to the marinade, making sure each piece is coated evenly. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, but overnight is best for maximum flavor.
In the meantime, prepare the shawarma sauce. In a separate bowl, mix together the tahini, yogurt, mayonnaise, lemon juice, minced garlic, salt, and black pepper. Adjust the seasoning to your taste.
When you're ready to cook the chicken, you can either grill it on a barbecue or use a stovetop grill pan. Cook until the chicken is fully cooked and has a nice char, usually 4-5 minutes per side.
While the chicken is cooking, warm the pita or flatbreads.
To serve, place a portion of the cooked chicken on each warm bread. Top with sliced cucumbers, tomatoes, onions, and a generous drizzle of the shawarma sauce. Add fresh parsley or cilantro for extra freshness.
Fold the bread to create a shawarma wrap, and enjoy!
