Made in a cupcake pan, these easy mini cheesecakes are topped with fresh blueberries and sit on a sweet cream cheese filling and yummy oatmeal biscuits crust.

Ingredients:

60 g oatmeal cookies
30 g melted butter
120 g cream cheese
80 g Greek yogurt
50 g erythritol sweetener
1 teaspoon vanilla extract
1 egg
1 tablespoon lemon juice
7 g cornstarch
bake 15-20 minutes at 160°C/320°F
add with your favorite berries
leave to cool and put in the fridge for 1 hour
