These crunchy oatmeal cookies are healthy and perfect for breakfast cookies or after-school snack. Made with few ingredients and ready in 5 minutes. These delicious cookies are gluten-free, vegan, and easy to make. Mix everything and you will be satisfied with the result! A recipe suitable for everyone, including vegans!

Ingredients:

230 g rolled oats / 2.56 cups
40 g coconut sugar / 2.85 ( ~ 2 3/4) tablespoons
4 g baking powder / 0.835 ( ~ 3/4) teaspoon
30-40 ml plant milk / 2-2.5 tbsp
1 teaspoon vanilla extract
90 ml coconut oil / 6 tbsp
pinch of salt

bake 18-20 minutes at 180 °C / 360°F
