Soft and fluffy, these easy gluten-free lemon muffins are bursting with the refreshing taste of citrus lemon. With a moist crumb that stays tender for days, these muffins make the perfect breakfast or snack for summer or anytime of the year!
Beautiful, light, smooth taste with a sensitive, wet structure.
Suitable for people with gluten intolerance. but I recommend this amazing dessert to everyone!

Ingredients:

35 g butter(82% fat) / 2 1/2 tablespoons.
2 tbsp erythritol sweetener(or sugar)
2 eggs
lemon peel
juice from 1/2 small lemon
50 g rice flour / 1/2 US cup.
1/2 teaspoon baking soda (2 g)
45 g coconut flakes / ~ 3/4 US cup.

bake 20-23 minutes at 180°C /360°F
