Here's a recipe for Eggplant Potato Masala:

Ingredients:

- 1 large eggplant (brinjal), diced
- 2 medium-sized potatoes, diced
- 1 onion, finely chopped
- 2 tomatoes, chopped
- 2 cloves garlic, minced
- 1-inch piece of ginger, grated
- 2 green chilies, slit
- 1/2 teaspoon turmeric powder
- 1 teaspoon cumin seeds
- 1 teaspoon mustard seeds
- 1 teaspoon garam masala
- 1/2 teaspoon red chili powder (adjust to taste)
- 1/2 teaspoon coriander powder
- Salt to taste
- Cooking oil
- Fresh cilantro leaves for garnish

Instructions:

1. Heat oil in a large pan or skillet. Add cumin seeds and mustard seeds and let them splutter.

2. Add chopped onions and sauté until they turn translucent.

3. Add minced garlic, grated ginger, and green chilies. Sauté for a minute.

4. Add the diced potatoes and eggplant. Cook for about 5-7 minutes, stirring occasionally.

5. Add the chopped tomatoes, turmeric powder, red chili powder, coriander powder, and salt. Cook until the tomatoes are soft and the oil begins to separate.

6. Sprinkle garam masala and stir well.

7. Cover the pan and let the vegetables cook on low heat until they are tender. You may need to add a little water to prevent sticking.

8. Once the vegetables are cooked and the masala is well blended, garnish with fresh cilantro leaves.

9. Serve the Eggplant Potato Masala with rice or naan bread. Enjoy!
