SPOOKY STUFFED PEPPERS (creates 5 peppers)
INGREDIENTS
• 3 packets of Ben's Original Wholegrain Spicy Mexican Rice 220G
• 225g Halloumi (you can replace with chicken)
• ½ Medium courgette
• 1 vine of baby tomatoes / a handful if not on the vine
• ½ Red Onion
• ¼ pouch of refried beans
• Sprinkle of cheese
• Salt & pepper
METHOD:
STEP 1:
Pre-heat the oven to 180 degrees. Heat the oven to 220C/200C fan/gas 7.
Chop the Courgette, onion and tomatoes and halloumi into small pieces
STEP 2:
On a medium heat, add the rice to the saucepan, using the wooden spoon to break up the chunks. Stirring occasionally. Add the chopped veg and halloumi to the rice and mix
STEP 3:
Meanwhile, prepare the pepper. Cut the top of the peppers and remove seeds and membrane.
Cut spooky faces into one side of each pepper
STEP 4:
Add the refried beans the rice and veg mix and stir until mixed. Line the tray with baking paper. Using your wooden spoon add the rice mixture into the centre of the pepper. Top with Cheese, salt and pepper.
STEP 5:
Remove from the oven and ENJOY !!!
