These easy and delicious breakfast muffins are the perfect grab-and-go breakfast option. Made with a few simple ingredients, you probably already have on hand, you can customize these muffins by adding in your favorite fillings such as nuts, berries or chocolate chips. These muffins are versatile, healthy and perfect for breakfast or an afternoon snack. Enjoy them warm with some salted butter and honey or top them off with extra nut or seed butter or jam. Make a batch of 6 medium sized muffins or double or triple the recipe as desired.

Ingredients:

1 large ripe banana
1 large egg
1 teaspoon vanilla extract
80 g peanut butter(1/3 cup)
65 g rolled oats(3/4 cup)
pinch of salt
1/2 teaspoon baking powder
bake 20-25 minutes at 180°C /360°F
smear with honey
greek yogurt
