How to make Easy Maamoul / Pistachio and dates Cookies /

These are so delicious cookies are made of semolina flour and butter mixed with clarified butter and stuffed with date and pistachio with rose water. They are not too sweet just the way I like them. They crumble in your mouth just perfect.

Ingredients:

1 3/4 cup fine semolina
1/2 cup flour
1/4-1/2 sugar
1 tsp mahlab
1/4 tsp dry yeast or 1/2 tsp baking powder
1/4 tsp salt
1/2 cup butter + 1/4 clarified butter melted or use all butter
1/4 to 1/2 cup rose water to be added gradually to the semolina mix.

How to make the fillings:

- 1 cup Crush pistachio with rolling pin
- Add sugar to your liking about 2-3 Tbsp
- Add rose water little by little until it becomes sticky together.
- Make very small balls and set aside.

-1 cup date paste
-Fried in a little of oil about 2 Tbsp for a few minutes
-Add 1 tsp cardamom or cinnamon powder.
-Mix well and make very small balls and set aside.

Maamoul mold made of wood or plastic. If the molds are not available, you can make them just round shape.
