Easy 10 min Capsicum Tomato Rice Recipe made with Perfect to pack for your lunchbox

1. Wash and Soak 3/4 cup Basmati Rice for 20 mins.

Add to boiling water and cook upto 80%. 2. Heat oil and add 1 tsp each mustard seeds, chana daal and urad daal. Fry for a min and add 1 sliced onion, curry leaves and 2 slit green chilli. Sauté for 2 mins.

3. Add 1 large tomato and 1 capsicum, salt, 1/2 tsp turmeric, 1 tsp red chilli powder and cook until tomatoes soften a bit.

4. Add boiled rice, a lil more salt and 2 tsp Vangi Bath Masala. Mix gently until rice gets coated with all the masalas. Finish with coriander leaves and serve.
