"Flavor Explosion: Spicy Chilli Oil Smashed Potatoes to Heat Up Your Taste Buds!"

Ingredients
500g cocktail/small potatoes
3 Tbsp chilli oil (oil only)
Flakey sea salt
To garnish: more chilli oil, diced chives
Method
1) Place the potatoes in a saucepan and cover with cold water. Add a generous amount of salt, bring to a boil and simmer for 20 minutes or until slightly fork tender. Drain the potatoes and leave in colander for 10 minutes.
2) Preheat oven to 220C/430F. Line a baking tray with baking paper and brush on some chilli oil. Grab a potato and use a glass to smash it down onto the chilli oil, then repeat with the remaining potatoes. Brush the tops of the potatoes with remaining chilli oil, sprinkle generously with flakey sea salt and roast for 30-35 minutes or until crispy.
3) To serve, top with more chilli oil and diced chives and DIG IN 🤤
