Jamaican Jerk Chicken BBQ Recipe hope you enjoy

Brine
1 tsp peppercorn
1tsp red chili flakes
1 tbsp salt
1/4 sugar
2 Bay leaf
3 cloves garlic
1 tbsp ginger
Leave in the fridge overnight

Marinade
1 tbsp salt
1/4 cup brown sugar
1 Finley chopped large onion
5 chopped green onions
1 tbsp chopped ginger
3 cloves of garlic
1-2 habanero chili
juice of half orange
juice of half lime
1 tsp black peppers
1 tsp cinnamon
1/4 tsp nutmeg
Handful of thyme
2-3 tbsp dark soy sauce
leave to marinate for 1 hour
