"Wholesome High-Protein Sweet Potato Delight with Chickpeas, Spinach, and Creamy Cottage Dip!"

This sweet potato chickpea cottage cheese dip is a high protein meal that packs a 17g of plant-based protein per serving, but it’s also super gut-healthy with the fiber-filled veggies. You can meal prep ahead have the chickpeas and dip ready ahead of the week.

Ingredients:
-2 x Sweet potatoes currently 79p in @lidlgb
-Chickpeas: I used @odysea_ltd already in tomato sauce blend.
-2 minced garlic, half jalapeno
-Oil for cooking
-Seasoning ¾ tsp salt @blackthornsalt smoked paprika @lachinatasmokedpaprika pepper, parsley.
-2 tbsp water
-3/4 bag of washed spinach.
-Handful fresh coriander.

Jalapeno cottage dip
-Blitz 1 tub cottage cheese, with ½ jalapeno, handful of fresh coriander, squeeze of lemon. Recipe coming 👀

Method:
-Wash, scrub your sweet potato clean, prod with a fork all the way around.
-Season with olive oil, and salt and pepper. Airfry for 20-25 minutes on 190c @ninjakitchenuk until soft.
-In the mean time, add some oil to a pan, cook the garlic and chilli and add in the seasoning.
-Add the seasoned chickpeas and cook for 5 minutes, add the spinach and add the lid to cook for 5-10 minutes.
-Optional, add some water if its dry and check your consistency. Finish with some fresh coriander.
-Once the sweet potato is cooked, slice it mash the sides down and add some butter, and season with salt and pepper.
-Add the chickpeas, and a generous amount of the jalapeno cottage cheese dip, coriander and some pickled onions.
