Chicken Mandi Recipe or Mandhi Recipe and Smokey flavoured rice

i large chicken
chicken seasoning
1 teaspoon saffron coloring
1 teaspoon turmeric
1 teaspoon salt
1 teaspoon Saudi spice mix

rice mixture
2 1/2 cups of Basmati rice
2 medium red onion
1 large cinnamon stick
5 cardamom pods
5 cloves
1 table spoon salt
1/2 cup yellow raisin
1 liter of water

garnish
roasted almonds
coriander parsley

olive oil and small charcoal for added smokiness

Saudi Spice mix :
1⁄4 cup sweet paprika.
2 tablespoons black pepper.
2 tablespoons chat masala.
1 tablespoon ground coriander.
1 tablespoon ground cinnamon.
1 tablespoon ground cloves.
2 tablespoons ground cumin.
1 teaspoon ground cardamom.
1 tablespoon of grated nutmeg (may be omitted)
1 tablespoon of ground dried lime (loomi or noomi basrah)
