RECIPE

SAUCE

1/4 Cup Chili Powder
1 Tbsp Garlic Powder
1 tsp Ground Cumin
1/4 tsp Ground Oregano
4 Tbsp Collagen
2 Cups Chicken Stock
Salt to Taste

1) Add all of your ingredients to a pan over medium heat. Bring to a simmer and let reduce for 8-10 minutes or until thickened.

TORTILLAS

5 oz Pork Rinds, Ground
5 Eggs
1 Cup Low Moisture Mozzarella

1) Add all of your ingredients to a blender and blend on low for 1-2 minutes.
2) Place a non-stick pan over medium heat. Place down a ball of your batter and immediately press out with something flat. Just make sure it's thin and even. Once set on one side (about 1 minute), flip and sear the other side for about 30 seconds. Should make between 5-7 tortillas

CHICKEN

1.5 Lb Chicken Tenderloins (or choice of chicken), Diced
1/4 Cup Valentina Hot Sauce
1/2 Lime, Juiced
1 tsp Salt

1) Combine all of your ingredients in a bowl and let marinate for about 10 minutes.
2) Once marinated, place a pan over medium high heat and add in 1 tbsp of butter. Let melt and cook your chicken in batches by searing one side for 4 minutes and flipping and let cook for another 2-3 minutes.

ASSEMBLE
1 Batch Enchilada Sauce
1 Batch Chicken
1 Batch Tortillas
1 Cup Colby Jack Cheese

1) Place a tortilla down and add a couple ounce of your chicken. Top that with some colby jack. Top this with a little sauce. Fold and place into a 9x9 baking dish. Repeat until baking dish is full. Pour over the rest of your enchilada sauce and top with the rest of your cheese. Place this into an oven at 350°F for 10 minutes or until melted thoroughly.
