Pickle Brine Mayo - Is This the Ultimate Keto Condiment?

It doesn't get more keto than mayonnaise - it's essentially eggs and oil. It's so simple to make at home and doing so allows you to avoid some of the inflammatory oils used in commercial mayo.

In this video, I sub out the water and vinegar that are traditionally used in mayo for the flavor bomb of pickle brine. You can use any pickle brine you want for this recipe: sweet, dill, jalapeño, you name it.

Since this video is more about technique than an actual recipe, I have not created a recipe card on my site. It's as simple as:
- 3 TB pickle brine (45mL)
- 1/2 TB Dijon mustard
- a generous pinch of salt
- 2 large egg yolks
- 1 cup of the oil of your choice (240mL)
