Churros —
▢ 2 cups water
▢ 3 Tbsp vegan sugar
▢ 1 tsp salt
▢ 4 Tbsp vegetable oil
▢ 2 cups plain flour
▢ Oil for frying

Cinnamon sugar —
▢ 3/4 cups vegan sugar
▢ 1 Tbsp pumpkin spice

▢ Maple syrup, for serving

1. For pumpkin spice sugar — combine both in a bowl until well mixed.

2. For churros — cut out 8 pieces of parchment paper. Draw circles (for guide) on parchment then set aside. In a large saucepan, add water, sugar, salt, & vegetable oil. On a medium heat, bring to a boil. Slowly add flour, stirring until a ball forms. Let cool for 10-15 minutes.

3. Transfer dough to a piping bag fitted with a star tip. Pipe churro dough onto parchment paper into 2 inch circles.

4. In meantime, in a large saucepan/pot, heat oil for frying to 375°F.

5. Fry until golden, about 2-3 mins. Let cool till warm then toss in pumpkin spice sugar. Serve with maple syrup.
