INGREDIENTS:
1/ 2 pound pasta
2 tablespoons unsalted butter
Olive oil
2 garlic cloves, minced
6 ounces cherry tomatoes
1 shot vodka (preferably Tito’s)
1 cup heavy cream
Kosher salt and freshly ground black pepper, to taste
Red pepper flakes, to taste
1/ 2 cup grated Parmesan cheese, plus more for serving
Fresh basil, for garnish

RECIPE:
1. In a pot of salted water, cook the pasta until it’s al dente. Drain and set aside.
2. In a pan, melt butter with a dash of olive oil over medium heat.
3. Add the minced garlic and cherry tomatoes to the pan. Sprinkle with salt and cook until the tomatoes soften, then gently smush them.
4. Stir in tomato paste and cook for a minute or two to incorporate.
5. Add vodka and mix. Follow with 1 cup of heavy cream, stirring until well combined.
6. Allow the sauce to simmer for 5-7 minutes to burn off the alcohol. Season the sauce with salt, pepper, and red pepper flakes to taste.
7. Add the cooked pasta to the sauce. Pour in a dash of pasta water and Parmesan cheese. Mix well.
8. Cook for a few more minutes until the pasta is well-coated. Garnish with extra Parmesan and fresh basil leaves before serving.
