"Flipping Flavors: Delight in the Crispy Goodness of Scallion Pancakes"

Ingredients:

2 cups all purpose flour
About 2/3 cup water ( more or less if needed )
Salt to taste
1 cup chopped scallions
Black sesame seeds
1/3 cup sesame oil
1/3 cup cooking oil

Dipping sauce:

1 tbsp light soy sauce
1/2 tbsp. sesame oil
Salt to taste
1 tbsp chili oil
Chopped green onion and coriander

Method:

Put flour into a bowl. Pour in hot water and salt. Stir well. Use your hands to combine the mixture into a rough looking dough. Add more flour if needed Grasp dough to form a ball, cover, and rest for 10 minutes.

After resting, then knead until very smooth (around 3-5 minutes ). Then divide the dough into equal parts . Shape each portion into a smooth round dough. Cover the rest for 20 to 30 minutes.

With a rolling pin, flatten the dough ball into thin flat shape. Brush with sesame oil , sprinkle chopped scallions and sesame seeds on top. Fold up the dough into a cylinder. Slightly lengthening the cylinder with two hands, and then roll from one end to the other to form a snail shape. Suck the end into the dough.

Roll the dough into round circles.

Warm up a pan on high heat. Add some oil and then place the scallion pancakes. Once you put the pancakes in, remember to adjust to medium-high heat. Cover and cook for 3-4 minutes . When the bottom is golden brown, flip the side and cook the other side for additional 3-4 minutes or until cooked through.

Serve warm with the dipping sauce and enjoy.
