INGREDIENTS :

4 to 6 halved chicken breasts
1 half lemon ( sliced )
80 grams plain flour ( 2.82 oz )
70 grams grated parmesan ( 2.46 oz )
15 + 15 grams butter ( 0.5 + 0.5 oz )
10 grams chopped parsley ( 0.35 oz )
230 ml chicken broth ( 7.77 fl oz )
190 ml heavy cream ( 6.42 fl oz )
35 ml lemon juice ( 1.18 fl oz )
1+ 1 tablespoon olive oil ( 14.5 + 14.5 ml )
2 teaspoons mustard ( 9.96 grams )
1/4 teaspoon salt ( 0.57 grams )
1/4 teaspoon ground black pepper ( 0.58 grams )
2 minced garlic cloves
salt & pepper ( seasoning )

INSTRUCTIONS :

.season both sides of halved chicken breasts with salt & pepper
.coat halved chicken breasts with flour
.in a pan on medium heat add 15 grams butter
.once melted add 2 tablespoons olive oil
.add chicken, cook for 3 minutes each side ( 6 minutes total )
.in a large pan on medium heat add 15 grams butter
.once melted add 1 tablespoon olive oil
.add 2 minced garlic cloves, cook for 1 minute
.add most of parsley & mix well
.add 230 ml chicken broth, 35 ml lemon juice
.add 190 ml heavy cream & mix well
.add 2 teaspoons mustard, 70 grams grated parmesan
.add 1/4 teaspoon salt, 1/4 teaspoon ground black pepper
.mix well, cook until parmesan melts
.add chicken & submerge into the sauce
.add lemon slices
.cover with lid & cook for 15 minutes
.serve & garnish with chopped parsley & grated parmesan
