Just melting cheese in a pan really BUT make a chicken quesadilla with it. It's the cheese tortilla episde!

RECIPE

This one is less of a recipe and more of a technique.
Whit that said:

2 Oz Mozzarella

1) Place a non-stick pan over medium heat and add your cheese in a thin layer.
2) Let this cook and caramelize for about 2-3 minutes or until you can start to see the browning from the top. Feel free to flip if so desired to caramelize the other side, but it's not necessary.
