Here's a simple recipe for Eggplant Potato Masala:

Ingredients:
- 1 large eggplant (brinjal), diced
- 2 medium-sized potatoes, diced
- 2 tomatoes, finely chopped
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1-inch piece of ginger, minced
- 1/2 tsp cumin seeds
- 1/2 tsp turmeric powder
- 1 tsp red chili powder (adjust to your spice preference)
- 1 tsp coriander powder
- 1 tsp garam masala
- Salt to taste
- Cooking oil
- Fresh cilantro for garnish

Instructions:

1. Heat oil in a pan and add cumin seeds. Let them splutter.

2. Add chopped onions and sauté until they turn translucent.

3. Add minced ginger and garlic, and sauté for a couple of minutes.

4. Add turmeric, red chili powder, and coriander powder. Stir well.

5. Add the chopped tomatoes and cook until they soften and the oil begins to separate.

6. Add the diced potatoes and eggplant. Mix them well with the tomato-spice mixture.

7. Add salt and a bit of water. Cover the pan and let the vegetables cook until they are tender. You may need to add more water during this process.

8. Once the vegetables are cooked, add garam masala and cook for a few more minutes.

9. Garnish with fresh cilantro and serve hot with rice or flatbreads.
