-large brain that must get priority energy and lots of it
-small intestine [digests 60% of food];
ideal for macro & micro-nutrient DENSE foods

Many think that fiber is VERY GOOD--it is not!
Where do we metabolize fiber? ONLY PLACE IS COLON!
-it is rudimentary
-15% of our digestion
-limited fermenting capacity
FERMENT & MAKE B12
in colon;
but can't absorb it there!

Acid-based digestion...
Food we eat NOT BROKEN DOWN BY BACTERIA
Broken down by stomach acid with pepsin
To absorb protein, B12, minerals NEED STOMACH ACID
-if eat lots of fiber with
protein: will NOT absorb
-protein nor minerals

We have small, weak pancreas...Role of pancreas: release insulin:
Insulin required to process carbs [& keep blood sugars in check]
"We are bestowed with pancreas that cannot handle large
glycemic load --if overloaded with sugar, will simply die"
FAILURE TO MAKE INSULIN

Many do not support expensive tissue hypothesis...

Fermentation: either in foregut [ruminants] or
hind gut [horses & primates]
Or: acid-based auto enzyme digestion, breaking down food:
-stomach acid; enzymes [pepsin; amylase; lipase]
