This taco casserole is super easy considering it feeds 6 people. It's also a fantastic low carb addition to any weeknight and is a perfect carnivore recipe.

RECIPE

Tortisagna Noodle

5 Oz Ground Pork Rinds
4 Oz Mozzarella, Shredded
4 Eggs

1) Place all of your ingredients into a blender and blend until homogenous.
2) On a baking sheet, lay out parchment paper and add your dough. Lay down another sheet of parchments and press down by hand until about 1/4" thick.
3) Place this into the oven at 350°F for 8-10 minutes or until lightly browned and firm,

Seasoned Beef

1 1/2 Lb Ground beef
1 tsp Beef Base OR 1/4 Cup Beef Broth
1/2 tsp Granulated Garlic
1 tsp Cumin
1/2 tsp Granulate Onion
1 Tbsp Chili Powder
1/8 tsp Dried Oregano
1 tsp Salt
1/4 tsp Black Pepper

1) Place a pan over medium high heat and break in your beef. Use a spatula to break it up even more until you have a nice crumble. Once crumbled and half the pink is gone from the meat, add all of your seasonings and combine. Cook for an additional 2 minutes.

Assembly
3 Oz Sharp Cheddar
3 Oz Monterey Jack
1 Tortisagna Noodle
1 Seasoned Ground Beef

1) Blend your cheeses together.
2) Using a loaf pan, size your noodles and cut to that size. On the bottom, add 1 strip of your tortilla lasagna noodle. Top that with a couple tbsp of your cheese. Top that with a layer of your beef. Follow that with cheese. Finally another tortilla strip. Repeat until all of your ingredients have been used up.
3) Once assembled, place this into an oven that's set to 350°F for 8-10 minutes or until cheese is golden brown.
