RECIPE
8 Oz Cooked Country Breakfast Sausage
6 Oz Shredded Mozzarella\
4 Eggs
1 Oz Pork Rinds
4 Strips Bacon
3 Oz Cream Cheese
1/4 Cup Half and Half
1/4 tsp Black Pepper
1/4 tsp Granulated Garlic
1/2 tsp Salt
Pinch Dried Thyme
1) Place your cooked breakfast sausage, 4 oz of shredded mozzarella, 1 egg, and the pork rinds into a blender or food processor and blend on low for about 2 minutes.
2) Dice your bacon and cook in a saute pan over medium high heat until a little bit crispy or about 5 minutes. Reserve the bacon grease.
3) Pour the bacon grease into a large pan along with your pizza dough. Spread this evenly by hand until it hits the edge of the pan. Place this pan over medium heat and cook for about 6 minutes to let the crust start to form on the bottom. After that time, place the pan into the oven set at 350°F for 10-12 minutes or until the top of the crust has set.
4) Place a heat safe bowl over a pot of simmering water along with your cream cheese, half and half, pepper, garlic, salt, and thyme. Whisk this until the cream cheese and the half and half have combined completely. Set aside.
5) Place a saute pan with about 1 inch of water over medium high heat and bring to a simmer. Add your vinegar. In a small bowl, crack the remainder of your eggs. Using a spoon or slotted spoon, carefully swirl your simmering water and pour your eggs in. Allow to cook for about 2 minutes before flipping and cooking for an additional 2 minutes. Remove from the water and allow to drain on a paper towel.
6) By this point your crust should be ready. Top your crust with your sauce, then the remainder of your cheese, and finally your bacon. Place this into an oven set to 400°F for 12-15 minutes or until the cheese is golden brown. Top the pizza with your poached eggs and slice.
