If you are watching your diet, poaching can be a healthier option because it is cooked in water and there is no additional oil or fats needed.
For you to have flawlessly poached eggs, the eggs need to be fresh always. Specifically, because there is a loss of structural integrity in the ovalbumin (egg white) over time as the eggs lose its freshness. This is due to a breakdown in protein and therefore the egg yolk is unable to be held in suspension.
