Zucchini and minced meat in tomato sauce - cook with what you have

Again one of those recipes that is born out of what needs to be consumed adding to the meat I bought. The red pesto was already over the best by-date, so this means some pantry rotation was due. My neighbour did not want any more zucchini and so she distributed them. We love them and having some more to eat is always great. What does not come out well in this video is the way you get the "too much water" out of the zucchini. You add a layer of zucchini and add a pinch or two of salt, the another layer of zucchini and some more salt etc. In the end you mix the zucchini (and included salt) and let it sit until you see the water that came out of the zucchini.
If you want to make this recipe vegetarian or vegan: substitute the meat with mushrooms. Use a meat-grinder to make "minced mushrooms". This will give you a very similar texture and taste.
You can also use this sauce as a condiment for noodles.
