Check out this video to see how we are turning a local, invasive plant into food. Below are the recipes we used in writing, for your convenience. We have also included chapters below for you to use to skip ahead and revisit portions of the recipe if you are following along. Trust us.... these recipes are 🔥🔥🔥... pun intended 😁 (you'll have to see the video).

JELLY RECIPE
Ingredients (makes 5 half pint jars):
8 cups Autumn Olives
2.5 cups Water
3 Tablespoons Lemon Juice
3.5 Tablespoons Powdered Pectin
3 cups Sugar
1/2 Teaspoon Butter

1. Pour 2 cups of water over the berries and "squish"/crush the berries until no whole berries remain (some is okay)
2. Boil this mixture for 8 minutes, stirring constantly
3. Strain liquid through fine mesh strainer and cheese cloth or a food mill, gently pressing the liquid from the berries. If you use cheese cloth, make sure to let the mixture cool before handling
4. Add water to the mixture to make a combined volume of 4 cups (should be ~1/2 cup of water)
5. Add lemon juice, pectin, sugar and butter and return to a boil
5. Boil hard for 1 minute
6. Fill pre-heated (sterilized) jars and seal in a hot water bath for 15 minutes

FRUIT ROLLS (FRUIT LEATHER) RECIPE
Ingredients (makes 1 Fruit Roll):
2 cups Autumn Olives
1/4 cup Water

1. Pour the water over the berries and "squish"/crush the berries until no whole berries remain (some is okay)
2. Boil this mixture for 8 minutes, stirring constantly
3. Strain liquid through fine mesh strainer and cheese cloth or a food mill, firmly pressing the liquid from the berries. If you use cheese cloth, make sure to let the mixture cool before handling
4. Place mixture on non-stick sheet in a dehydrator or in the oven (set at 130°F) and process until mixture becomes a pliable solid (ours took ~3 hrs). Enjoy immediately, or refrigerate up to 1 week.
