Chickpea and vegetables casserole recipe

Ingredients
2 cups of cooked chickpeas
1 3/4 cup of tomato puree
1 1/2 tbsp maple syrup
1 tsp ground cumin
1/4 tsp cayenne pepper (optional)
1 tsp salt, or to taste
4 – 5 medium yellow potatoes, peeled and cut into 1/8″ thick slices
2 – 3 zucchini, cut into 1/4″ thick slices
2 medium tomatoes, cut into 1/4″ thick slices
1 medium onion, cut into 1/4″ thick slices
1 1/4 tbsp garlic, finely chopped
1 tsp dry oregano
1 tsp dry thyme
1/2 tsp ground black pepper
3 – 4 tbsp olive oil
Garnish:
2 tbsp finely chopped parsley
1/2 cup fresh basil
olive oil
ground black pepper
