Caffeine is the active substance of coffee, which can cause restlessness and anxiety in some people.

The process of decaffeination is very complicated and can be done in several ways.
You can first separate the caffeine from the coffee beans with water (of course, along with other substances that cause the taste and smell of coffee). Then, using solvents such as ethyl acetate, caffeine is separated from the solution and finally the remaining liquid is added to the coffee beans again.
In another method, caffeine is separated from coffee beans by using pressurized liquid CO2.
