In this video, I do a huge calorie challenge, trying to eat and burn 5000 calories in a single day--more than I ever have! I'm emulating some of the greats (@WillTennyson @JoeFazer @Browney @ErikTheElectric @MarkLewisfitness ) who tried this challenge, but they did 10,000 calories...and almost everyone failed. I am about half their size, so I'm going to try half the challenge. Cranberry Orange Pancakes (makes 6):
1/3c oats
2 dates
1/3c cottage cheese
1 egg
1/4-1/3c almond milk
1t baking powder
1/4t baking soda
Dash of salt
2T craisins
1/4-1/3c flour
2 clementines (1 in mix, one for topping)
2T toasted almonds
2T maple syrup

Add oats through salt and one clementine (plus some of the peel for extra orange flavor) to a blender and process until smooth. Stir in craisins and flour. Cook on a greased pan over medium heat. Serve with clementine, diced almonds, and maple syrup. Delish!

Chicken Burrito (makes one)
Tortilla (10-12in)
1/2c shredded cheese
1/2c spanish rice
1/2c rotisserie chicken/beef/queso mix
1/2c roasted veggies
1/2c mixed greens
1T chipotle mayo
1/4c guacamole
1/4c salsa

Put everything on the tortilla (except the guac and salsa) and microwave for 30-60sec to heat and wilt the greens. Give it a little mix and roll her up. Brown on all sides in a pan over medium-high heat. Delish!
