Sure, I can provide a quick recipe for a simple and delicious Chicken and Rice dish. Let's make Chicken and Rice Pilaf:
Ingredients:
1 cup long-grain white rice
1.5 lbs boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
1 onion, finely chopped
2 cloves garlic, minced
2 cups chicken broth
1 cup frozen peas and carrots (or mixed vegetables of your choice)
1 teaspoon ground cumin
1 teaspoon paprika
Salt and pepper to taste
2 tablespoons cooking oil
Fresh parsley for garnish (optional)
Instructions:
Sauté the Chicken:
Heat oil in a large skillet or pan over medium heat.
Add chopped onions and garlic, sauté until softened.
Add chicken pieces and cook until they are browned on all sides.
Add Rice and Spices:
Stir in the rice, cumin, paprika, salt, and pepper.
Cook for 2-3 minutes until the rice is lightly toasted.
Pour in Broth:
Pour in the chicken broth and bring the mixture to a boil.
Simmer:
Reduce heat to low, cover the pan, and simmer for 15-20 minutes, or until the rice is cooked and the chicken is tender.
Add Vegetables:
Add frozen peas and carrots (or mixed vegetables) during the last 5 minutes of cooking.
Fluff and Garnish:
Once the rice is cooked and the liquid is absorbed, fluff the rice with a fork.
Garnish with fresh parsley if desired.
Serve:
Serve the Chicken and Rice hot, and enjoy your delicious meal!
