Ingredients:

For the Chicken Marinade:
- 500g chicken, cut into pieces
- 1 cup yogurt
- 1 tablespoon ginger-garlic paste
- 1 teaspoon red chili powder
- 1/2 teaspoon turmeric powder
- 1 teaspoon garam masala
- Salt to taste

For the Rice:
- 2 cups basmati rice
- Water for soaking
- 4-5 cups water for cooking
- 2-3 green cardamom pods
- 2-3 cloves
- 1 bay leaf
- Salt to taste

For the Biryani:
- 2 onions, thinly sliced
- 2 tomatoes, chopped
- 2-3 green chilies, slit
- 1/2 cup chopped mint leaves
- 1/2 cup chopped coriander leaves
- 2 tablespoons ghee (clarified butter)
- 2 tablespoons oil
- Saffron strands soaked in 2 tablespoons warm milk (optional)

Instructions:

1. Marinate the chicken: In a bowl, combine the yogurt, ginger-garlic paste, red chili powder, turmeric powder, garam masala, and salt. Add the chicken pieces and mix well. Let it marinate for at least 30 minutes, preferably longer in the refrigerator.

2. Prepare the rice: Wash and soak the basmati rice in water for 30 minutes. In a large pot, bring water to a boil and add the soaked rice, cardamom pods, cloves, bay leaf, and salt. Cook the rice until it's 70-80% cooked. Drain and set aside.

3. Fry the onions: In a separate pan, heat oil and ghee. Fry the sliced onions until they turn golden brown and crispy. Remove half of the fried onions for garnishing.

4. Cook the chicken: In the same pan with the remaining fried onions, add the marinated chicken. Cook until the chicken is tender and the oil separates from the masala. Add chopped tomatoes, green chilies, mint, and coriander leaves. Cook for a few more minutes.

5. Layer the biryani: In a large heavy-bottomed pot or biryani pot, layer the partially cooked rice and the chicken mixture alternately. Sprinkle the saffron milk over the top if using. Cover the pot with a tight-fitting lid.

6. Dum cooking: Place the pot on low heat and let it cook on "dum" (slow cooking) for about 20-25 minutes. You can also place a heavy object on the lid to seal it tightly.

7. Serve: Once done, remove from heat and let it rest for a few minutes. Garnish with the reserved fried onions. Serve your homemade chicken biryani hot with raita or salad.
