In this video, we’re going to talk about the rise in popularity of low-fat diets. In the 50s and 60s, there were two viewpoints about the cause of heart disease. Some experts believed fat consumption increased the risk of coronary heart disease while some believed the culprit was sugar.

Leaked documents between the Sugar Research Foundation and scientists between 1959 and 1971 showed communications with Frederick Stare M.D. of the Harvard University School of Public Health. Frederick Stare was a nutritionist who was an expert in the relationship between diet and heart disease.

Frederick Stare was paid millions of dollars to make the following claims:
1. Suppress/downplay the research connecting heart disease and sugar
2. Emphasize and promote the connection between cholesterol and heart disease

Frederick Stare’s claims largely started the rise of low-fat diets.
