Benefits of cauliflower:
1. It’s a great alternative in certain recipes (cauliflower rice, mashed cauliflower, tortillas, mac and cheese, and pizza crust)
2. It’s high in vitamin C (one cup will give you 85 percent of your RDA of vitamin C)
3. It contains choline (one cup will give you 45 mg of choline)
4. It’s rich in phytonutrients (sulforaphane, glucosinolates, carotenoids, and flavonoids)
