Ingredients:
- 2 cups basmati rice
- 4 hard-boiled eggs
- 1 onion, thinly sliced
- 2 tomatoes, chopped
- 2 green chilies, slit
- 1 tablespoon ginger-garlic paste
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon biryani masala powder
- 1/2 cup yogurt
- A handful of mint leaves, chopped
- A handful of coriander leaves, chopped
- Salt to taste
- Ghee or oil for cooking

Instructions:
1. Soak the basmati rice in water for 30 minutes, then drain and set aside.
2. Heat ghee or oil in a large pan and sauté the sliced onions until golden brown. Remove half of the onions and set aside for garnishing.
3. To the remaining onions in the pan, add ginger-garlic paste and sauté until fragrant.
4. Add chopped tomatoes, green chilies, turmeric powder, red chili powder, and biryani masala powder. Cook until the tomatoes are soft and the spices are well combined.
5. Beat the yogurt and add it to the pan. Mix well and cook for a few minutes.
6. Add the hard-boiled eggs to the pan and gently coat them with the masala.
7. In a separate pot, bring water to a boil and add the soaked rice. Cook until the rice is 70% cooked, then drain the water.
8. Layer the partially cooked rice over the egg masala in the pan. Sprinkle chopped mint leaves and coriander leaves on top.
9. Cover the pan with a tight-fitting lid and cook on low heat for about 15-20 minutes, or until the rice is fully cooked and flavors are well infused.
10. Garnish with the reserved fried onions and serve hot with raita or any side dish of your choice.
