Here's a simple recipe for Chickpea and Bottle Gourd Curry:
Ingredients:
- 1 cup chickpeas (canned or cooked)
- 2 cups bottle gourd (lauki), peeled and diced
- 1 onion, finely chopped
- 2 tomatoes, chopped
- 2 cloves garlic, minced
- 1-inch piece of ginger, grated
- 1 green chili, chopped (adjust to your spice preference)
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder (adjust to taste)
- 1 teaspoon garam masala
- Salt to taste
- 2 tablespoons oil
- Fresh cilantro leaves for garnish
Instructions:
1. Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
2. Add chopped onions and sauté until they turn translucent.
3. Add minced garlic, grated ginger, and green chili. Sauté for another minute or until the raw smell disappears.
4. Add the chopped tomatoes and cook until they become soft and the oil starts to separate.
5. Stir in the coriander powder, turmeric powder, red chili powder, and salt. Cook for a couple of minutes.
6. Add the diced bottle gourd (lauki) and mix well with the spices. Cook for 3-4 minutes.
7. Pour in enough water to cover the bottle gourd and chickpeas. Cover the pan and simmer until the bottle gourd becomes tender, stirring occasionally.
8. Once the bottle gourd is cooked, add the cooked chickpeas and garam masala. Simmer for another 5-7 minutes until the flavors meld together.
9. Garnish with fresh cilantro leaves.
Your Chickpea and Bottle Gourd Curry is ready to be served! You can enjoy it with rice or roti for a wholesome meal.
