Instructions:

Boil and Mash the Potatoes: Boil the potatoes until fully cooked. Drain the water and let it cool slightly. Then, peel and mash them in a large mixing bowl.

Add Spices: To the mashed potatoes, add chopped green chilies, grated ginger, cumin seeds, red chili powder, garam masala, salt, and 1/2 cup of bread crumbs. Mix everything well to form a uniform mixture. Adjust the spice level according to your preference.

Shape the Tikki: Divide the mixture into equal-sized portions and shape them into round or oval patties.

Prepare the Coating: In a separate bowl, make a thin batter by mixing the all-purpose flour with enough water to create a smooth, runny consistency. On another plate, spread some bread crumbs to coat the tikkis.

Coat the Tikki: Dip each potato patty into the flour batter, allowing any excess to drip off, and then coat it with bread crumbs. Ensure that each tikki is coated evenly.

Heat Oil: Heat oil in a deep frying pan or skillet over medium heat.

Fry the Tikki: Gently slide the coated tikkis into the hot oil and fry until they turn golden brown and crispy on both sides. Flip them carefully to ensure even cooking. It should take about 3-4 minutes on each side.

Remove and Drain: Once the tikkas are cooked to perfection, remove them using a slotted spoon and place them on paper towels to drain any excess oil.
