If you're looking for a simple and quick way to make spinach with cottage cheese (paneer) without the elaborate process of making Palak Paneer, here's a straightforward recipe for you:

Ingredients:

2 cups fresh spinach leaves, washed and chopped
200g paneer (cottage cheese), cut into cubes or crumbled
1 small onion, finely chopped
2 cloves garlic, minced
1-inch piece of ginger, minced
1-2 green chilies, chopped (adjust to your spice preference)
1/2 teaspoon cumin seeds
1/2 teaspoon turmeric powder
1/2 teaspoon red chili powder (adjust to your spice preference)
1/2 teaspoon garam masala
1 tablespoon oil or ghee (clarified butter)
Salt to taste
Instructions:

Blanch the Spinach:

Bring a pot of water to a boil.
Add the chopped spinach and blanch for 2-3 minutes until wilted.
Drain and immediately transfer the spinach to a bowl of ice water to stop the cooking process.
Drain again and set aside.
Sauté the Paneer:

Heat oil or ghee in a pan over medium heat.
Add the paneer cubes or crumbled paneer and sauté until they turn golden brown. Remove from the pan and set aside.
Prepare the Spinach and Paneer Mixture:

In the same pan, add a bit more oil if needed.
Add the cumin seeds and let them splutter.
Add the chopped onion and sauté until it turns translucent.
Stir in the minced garlic, ginger, and green chilies. Sauté for another 2 minutes until fragrant.
Combine and Season:

Add the blanched spinach to the pan and sauté for a few minutes until it's well combined with the onion-garlic-ginger mixture.
Sprinkle the turmeric powder, red chili powder, garam masala, and salt over the spinach mixture. Mix well.
Add Paneer and Serve:

Add the sautéed paneer to the spinach mixture and gently stir to combine.
Let everything cook together for 2-3 minutes, allowing the flavors to meld.
Serve:

Your simple spinach with cottage cheese (paneer) is ready to be served.
You can enjoy it as a side dish with roti, naan, or rice.
This dish is a quicker and lighter version of Palak Paneer, making it a great option for a simple and nutritious meal.

Enjoy your homemade palak paneer!
