How Much Should We Trust Crime Stats?

Crime (and more specifically, "gun violence") is the most common reason politicians give when trying to infringe on our right to keep and bear arms, but how much should we trust national reports like the FBI's Uniform Crime Reports or the National Crime Victimization survey, especially when they offer wildly different statistics about crime rates?
