"Indulge in Delights: Master the Art of Homemade Ravioli with Creamy Cashew Cheese Filling!"

Making your own ravioli takes a little bit of love, but it’s 100% worth it! The recipe is inspired by @veganewunder 🙏🏼

RECIPE (4 portions)
Pasta Dough:
- 2.5 cups (300g) semolina
- a pinch of salt
- 30g spinach (optional)
- 140 ml water

Cashew cheese filling:
- 1.5 cups (195 g) cashews, soaked
- 2 tbsp nutritional yeast
- 1/2 lemon, juiced
- 1/2 tsp garlic powder
- salt and pepper
- 75 ml water, to blend

❶ Blend spinach and water for the green coloring. Mix all ingredients for the pasta dough and kneed for 10-15 minutes until you get very a smooth dough. Refrigerate in an air-tight container for one hour.
❷ Soak cashews in hot water for at least 15 minutes. Blend all ingredients for the filling until smooth.
❸ Roll out the pasta dough as thin as possible (use a pasta machine if you have one!) and cut into rectangles. Put filling on one side, brush with water and close. Cut out the ravioli and seal with a fork.
❹ Boil the ravioli in well salted water for about 3-5 minutes.
❺ Toss in a little olive oil with some sage or eat however you like. Enjoy!
