A quick & easy salad using Japanese buckwheat noodles, perfect for a hot summer day!

RECIPE (2 portions)
- 150 g soba noodles
- 1/2 cucumber
- 3-5 red radishes
- 2-3 spring onions
- handful cilantro (optional)
- 1 lime

Dressing:
- 1 garlic clove
- small piece ginger
- 2 tbsp rice vinegar
- 2 tbsp mirin (or 1 tbsp maple syrup)
- 1 tbsp sesame oil
- 2 tbsp soy sauce
- 1 tbsp toasted sesame seeds
- 1/2 tsp chili flakes

❶ Finely chop the spring onions and place them in ice-cold water. Smash the cucumbers, remove the seeds and roughly chop.
❷ Cook the noodles according to packaging, then strain and rinse under cold water.
❸ Mix all ingredients for the sauce.
❹ Combine all ingredients in a bowl and enjoy!
