An iconic dish from Provence in France that celebrates the season of summer vegetables like no other 🍅🍆🫑

RECIPE (4 portions)
3-6 tbsp olive oil, add gradually
1 large eggplant
2 zucchinis
1-2 bell peppers
1 large onion
3 garlic cloves
3 medium tomatoes
2 bay leaves
a few sprigs thyme
oregano (fresh or dried)
parsley
salt & pepper

❶ Cut a cross at the bottom of the tomatoes. Blanch for 20 seconds, then remove the peel.
❷ Finely or roughly chop all the veggies.
❸ Gradually fry the eggplant, then the pepper, then the zucchinis and then the onion and garlic until everything is nicely browned. Be careful not to overcrowd the pan.
❹ Add all the veggies back to the pan and deglaze with the tomatoes.
❺ Add the bay leaves, thyme and oregano, cover with a lid and slowly cook for at least 30 minutes or up to 4 hours. (I like to do this in the oven at around 150°C)
❻ Use a ring mold to serve (optional), garnish with some fresh parsley and enjoy!
