"The Perfect Summer Treat: Effortless Tomato Galette Recipe for All Plant Lovers"

Nothing says summer like a beautiful rustic tomato galette 🤤 It’s an incredibly easy dish to make and a real crowd pleaser!

RECIPE
For the dough:
- 100 g all purpose flour
- 100 g whole wheat flour (or more all purpose flour)
- 1/2 tsp salt
- 1/4 tsp baking powder
- a few sprigs thyme
- 50 g olive oil
- 70 ml water

For the filling:
- 1 large onion, caramelized
- 100 g vegan cream cheese
- lemon juice
- salt & pepper

Toppings:
- 200 g tomatoes
- oregano
- olive oil
- fresh herbs (basil, chives)
- pesto (optional)

❶ Mix flour, salt, thyme and olive oil. Mix until you have a sandy mixture. Add the water and knead until combined. Rest in the fridge while preparing the cream cheese filling.
❷ Finely chop the onion and cook on medium-low heat, deglazing a couple of times, until caramelized.
❸ Combine all ingredients for the filling.
❹ Roll out the dough, transfer to a baking tray, then spread the filling, leaving some space at the edge to flip later.
❺ Top with the best tomatoes you can find, oregano and olive oil, then fold in the edges.
❻ Bake at 180°C for 35-40 minutes until golden brown.
❼ Top with some fresh herbs (I used basil and chives) and enjoy!
