"Deliciously Healthy Fusion: Elevate Your Tastebuds with Cauliflower Tofu Burritos!"

When I made these, I told Hannah that these are the best burritos I’ve ever made! (I tend to say this about a lot of dishes I make... 😅)
But this is an amazing recipe, go make it!

RECIPE
Cauliflower & tofu:
- 1 small head cauliflower
- 200 g tofu
- 3 tbsp oil
- 2 garlic cloves
- 1 tbsp agave syrup
- 1 lime, juiced
- 1 tsp oregano
- 2 tsp smoked paprika
- 1 tsp coriander
- 2 tsp cumin salt
- 1 tsp cayenne pepper

Fresh salsa:
- 2-3 medium tomatoes
- 1/2 red onion
- 1 jalapeño
- 1 lime, juiced
- small bunch cilantro
- salt & pepper

Black beans:
- 1 tbsp oil
- 1 garlic clove
- 250 g beans (with cooking liquid)
- 1/2 tsp cumin
- 1 tsp chili powder
- 1/2 lime, juiced
- salt

- tortillas
- quinoa
- cilantro
- avocado

❶ Break up the cauliflower into florets, cut the tofu, then mix with the remaining ingredients. Bake at 220°C for 20-30 minutes until it nicely browned.
❷ Finely chop all ingredients for the salsa, combine in a bowl and set aside.
❸ For the beans, sauté garlic in a little oil for 30-60 seconds, then add the beans with their cooking liquid. Season, then let it simmer until thickened.
❹ Heat the tortillas in the oven for 2-3 minutes (this makes them more flexible).
❺ Assemble all fillings, roll tightly and seal in a pan. Enjoy!
