Here's a step-by-step guide to making Chicken and Vegetable Chow Mein:
**Ingredients:**
For the sauce:
- 3 tablespoons soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon hoisin sauce
- 1 teaspoon sugar
- 1/2 teaspoon sesame oil
- 1/4 cup chicken broth
For the chow mein:
- 8 ounces chow mein or egg noodles
- 2 tablespoons vegetable oil, divided
- 2 boneless, skinless chicken breasts, thinly sliced
- 2 cloves garlic, minced
- 1-inch piece of ginger, grated
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 1 carrot, julienned
- 1 cup broccoli florets
- 1 cup snow peas, trimmed
- 1 cup sliced mushrooms
- 1 cup bean sprouts
- Salt and pepper to taste
- Chopped green onions for garnish
- Toasted sesame seeds (optional)
**Instructions:**
1. **Prepare the Noodles:** Cook the chow mein or egg noodles according to the package instructions until they are al dente. Drain them, rinse with cold water to stop cooking, and toss them with a little vegetable oil to prevent sticking. Set aside.
2. **Make the Sauce:** In a small bowl, whisk together the soy sauce, oyster sauce, hoisin sauce, sugar, sesame oil, and chicken broth. Set the sauce aside.
3. **Cook the Chicken:** Heat 1 tablespoon of vegetable oil in a large wok or a deep skillet over high heat. Add the thinly sliced chicken, season with a pinch of salt and pepper, and stir-fry until it's cooked through and slightly browned. Remove the chicken from the wok and set it aside.
4. **Stir-Fry the Vegetables:** In the same wok, add another tablespoon of vegetable oil. Add the minced garlic and grated ginger, and stir-fry for about 30 seconds until fragrant. Then, add the sliced bell peppers, julienned carrots, broccoli florets, snow peas, and sliced mushrooms. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
5. **Combine Noodles and Sauce:** Return the cooked chicken to the wok with the vegetables. Add the cooked noodles and bean sprouts. Pour the sauce over the mixture and toss everything together. Cook for another 2-3 minutes until everything is heated through and coated in the sauce.
6. **Serve:** Transfer the Chicken and Vegetable Chow Mein to serving plates. Garnish with chopped green onions and toasted sesame seeds if desired.
